Russia – Pelemany

Allow about 15 to 20 of these delicacies for each person – the more the better, Yana grins.  Once when I was cooking I made 100 it took about one hour- I am very fast when I get going. 

Yana is a veterinary surgeon from St Petersburg. She is scared that in the two years she has not been allowed to work, she will have forgotten her skills. We cry every day with frustration she tells me matter-of-factly.



  • 0.5 kg flour
  • 1 egg
  • 5 g salt
  • 200ml water


  • 5kg minced pork or beef
  • 3 grated onions
  • 5gm salt
  • 5gm pepper
  • Garlic

Make the dough and roll it out paper-thin. Press out small circles (slightly bigger than an egg cup).

For the filling, sauté the onions and garlic and add the meat and salt and cook. Mix the meat, onions and salt together. Spoon one heaped teaspoon in the middle of each circle and pinch the edges together then twist the ends together.

Boil in salted water with a bay leaf. Eat with plenty of butter and fresh dill.
