Estonia – Piparkook

This is a traditional Christmas dish from Estonia.

Another Christmas tradition in Estonia is to buy little cakes in the shape of Christmas trees and stars, these are hung on the Christmas tree and given as presents. When I ask Anita if she had a recipe for them she looked horrified and said, No we buy them!

In nearby Lithuania no meat is eaten on Christmas day but 12 different dishes are on the table.

Ingredients

  • Medium sized cabbage
  • 1 carrot
  • 1 onion
  • Cranberry jam
  • Black pudding

Chop the cabbage and put it into a saucepan on a low heat. Chop the onion and carrot, add them to the pan and simmer until done (20 – 25 minutes)

Cook the black pudding and serve with cranberry jam.
